| Oyster Dressing
4 eggs, beaten
2 cans whole oysters, plus liquid
1 stick of margarine, melted
2 wrapped stacks of saltine crackers (half of a
box)
Approximately 3 cups of milk
Pepper to taste
Grease a 3 quart
casserole dish. Add eggs, oysters and liquid and
stir until well blended. Stir in melted
margarine. Crush crackers very coarsly into egg
mixture. Pour in milk stirring very lightly so
as not break up the crackers. (Over stirring
makes the dressing dense and heavy.) Mixture
should be soupy. Salt is not needed due to the
saltiness of the crackers, but add pepper if
desired. Bake at 350 degrees for about one hour
or until puffy, browned and set in the center.
